Banana oat pancakes with fruit Pop-it’s

These pancakes are simple but nutritious, with no added sugar, these are perfect for baby led weaning or once your child is comfortable with textures
This ultimate recipe is perfect for children (and parents) of all ages and can be adapted for those with CMPA
Replace the egg with a teaspoon of baking powder and they are vegan too - Its recommended to limit excess salt in an infants diet, as such leaveners such as baking powder and soda should be avoided in children under 1

Ingredients
3/4 cup rolled oats
1 ripe banana
1/4 cup milk of your choice
1 egg (replace with 1 tsp of baking powder to go vegan - children over 1 only)
1 teaspoon vanilla
Toppings
1 fruit Pop-it
1 spoonful of unsweetened greek or vegan yogurt/berries
Method
1. Place all the ingredients in a blender, whizz until smooth
2. Lightly oil a non stick pan. Add batter and cook pancakes for 1-2 minutes a side, or until golden brown
3. Top with a fruit Pop-It and a dollop of greek yoghurt
